Measure the gravity reading of this grape juice with the help of a hydrometer. The gravity reading should be less than 1.090. Now, cover this grape juice and set it aside.
The next step would be to add 5 campden tablets to the remaining must. These tablets destroy any bacteria that are present in the must and also prevent it from future contamination. To add campden tablets to the must, you need to dissolve them in water first. Use a wooden spoon for this purpose. When the tablets are completely dissolved, add it to the must.
After you have added campden tablets to the must, cover it and keep it aside for twelve hours. After twelve hours, you need to add four teaspoons of pectic enzyme to the must. Mix the pectic enzyme and again cover the must and keep it aside for twelve hours.
After the second twelve hours get over, you would be required to add wine yeast mixed with the grape juice that you had set aside earlier. Mix five milligrams of wine years with the grape juice and add it to the must 12 hours after adding pectic enzyme to the must. Keep the mixture covered for the whole day while stirring two to three times throughout the day.
Once the fermentation has been done, you could add granulated sugar to the entire mixture. You could add sugar depending upon the taste that you are looking for.
