Wine releases its richest aromas when opened at a particular temperature. This temperature is different for every wine depending on the grape and the region. For example, Bordeaux is best served 2-3 degrees below the room temperature (65 degrees F) whereas the Beaujolais tastes best at 54 degrees Fahrenheit. The ideal temperature to store red wine is 52 to 65 degrees Fahrenheit and for white wine is 45-50 degrees Fahrenheit.
Let the wine breathe
Allowing a wine to breathe strengthens its flavor. It makes younger wines more smooth and balanced. Simply leaving the bottle open for an hour won't help aerate it. It will rather delay your service. Instead, go for a decanter with a wide opening, more surface area will allow faster aeration. If you do not want to invest on a decanter, swirling the wine glass would also help. Young tannic wines aerate in about 2hours, the older ones might take up to an hour. But, aged wines of 15years or older do not require aeration. Do not let them breathe for more than few minutes!
